I had the pleasure of meeting Ernesto Lima, farmer of Santa Elena. Farmed by brothers Fernando & Ernesto Lima, Santa Elena is located in Palo de Campana, Santa Ana on the Santa Ana volcano and has long been one of the best farms in the country. It was established as a coffee plantation around 1930 and is known for its very fertile lands, it frequently receives volcanic ashes, which makes the soil even more rich and fertile. The coffee production process is traditional and the coffee is grown under shade trees, mostly Ingas.
