At Needmore Coffee Roasters we believe that coffee is about strengthening communities. We source our Mexican Chiapas coffee from the Triunfo Verde Co-op because they share our commitment to environmental, economic, and social sustainability. The Triunfo Verde Cooperative is a group of 448 small coffee producers who use organic farming methods to promote the conservation and recovery of natural resources. By farming in the buffer zone of El Triunfo Biosphere Reserve and selling their Mexican Chiapas coffee at a fair price, these producers are able to improve living conditions for the organization’s members and produce a quality product without harming the environment.

Located in the highlands of the Sierra Madre de Chiapas, El Triunfo Biosphere Reserve is one of the world’s most diverse forest reserves. The reserve serves as a refuge to thousands of plant and animal species and contains Mesoamerica’s largest continuous cloud forest. When producing our Mexican Chiapas Coffee, the Triunfo Verde Co-op does their part to protect this rare and valuable refuge. Their coffee is shade-grown, requires no chemical fertilizers, and creates biological corridors in order to facilitate bird and animal migration. What is more, their organization promotes autonomy, gender equality, and freedom of expression among its members, fostering a coffee production culture that is committed to both environmental sustainability and social justice.  

Needmore Coffee Roasters’ Mexican Chiapas Coffee has a smooth-body and a medium roast with notes of toffee and milk chocolate. The coffee is washed or wet-processed, meaning that the coffee cherries are first machine-pulped, then the outer layer of skin is removed and the bean, with its mucilage, is fermented in water. Once the bean has fermented in water for a few days, the bean is washed from its mucilage. Although the process used for our Mexican Chiapas Coffee is quite new in the long history of coffee production, it takes considerable skill and yields some of the highest quality coffee in the world.
